Sterilising jars for cooking (chutney and jams) never done it before. Please help.? - chutney jars

I'm new in sterilized jars. Can someone help me with some good advice. I also saw the chutney and jam with wax paper between the pot and lid. What is the reason? Do you have to wait for the contents of the bottle before the lid cool? I have to stop some recipes that say, if the contents are cooled and some say he has put the lid after filling the bottle, then turn the pot on his head ..... Any help would be appreciated.

Cooking sterilize the jars and fill, as they are Hot! The cooling is left its mark. It creates a gap in this new content.
In addition, make jam, my mother would pour the wax paraphin shortly before closing the jars. () without baking paper
